I mean... who doesn't love pancakes? I LOVE pancakes! BUT most pancakes in the world are nutritionally worthless at best and entirely horrible for you at worst--usually loaded with carbs and sugar and completely absent of nutrients.
SO. I have sadly eaten very few pancakes in the last few years, but I have been trying to find ways to make them healthier. Unfortunately, I've learned that I'm pickier about them than I realized. And until a few days ago, I had not come up with a recipe worth sharing. Even the ones others were raving about didn't quite do it for me. Either the texture or flavor just wasn't quite right.
But THESE. I LOVE these pancakes! They are completely grain-free, low in sugar and carbs and absolutely delicious! And they're so moist and flavorful, I didn't even need any syrup. (My girls loved them, but they did drizzle a little extra maple syrup on top.)
And they're SUPER EASY to make! Enjoy!
Ingredients:
1/2 cup almond butter
1/2 cup unsweetened applesauce
2 eggs
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon maple syrup
cooking spray or butter for coating pan
Instructions:
1. Preheat griddle or cast iron pan to medium heat.
2. Mix all ingredients except butter and cooking spray, making sure you incorporate the almond butter very well. (You will likely need to re-stir between cooking batches to make sure the almond butter hasn't settled to the bottom of your bowl.)
3. Spoon onto hot pan in whatever size you like and cook until edges begin to become firm and top of pancake begins to bubble. Flip and cook an additional minute or so.
4. That's all there is to it! Serve with fresh fruit and/or your favorite syrup.
